The tube works so well as an oven because it is made of 2 layers of glass with a vacuum between the glass layers. The outer glass tube acts like a greenhouse allowing the power of the solar rays to enter the cooker. They then heat up the darkened inner layer to extremely high temperatures. The vacuum between the layers the acts as a super insulator to hold all of the trapped heat inside the tube.
